Jacob's Maple Candy

One of the things we did as we learned about maple sugaring was make maple candy.

We brought 2 cups of pure maple syrup to a boil (on medium).




Let it boil until it reaches 239 degrees. (It took 20 minutes or more.)



When it gets to 239 degrees, immediately take it off the heat and begin briskly stirring it with a wooden spoon. Stir it continually until it reaches the texture of fudge, then pour/push it onto a piece of waxed paper on the counter. Roll it flat, let it cool, and cut it into pieces. It's yummy! Ours ended up crunchier than fudge, but still good. It was the texture of sugar cubes, I guess.
